The main ingredients of a mojo sauce are garlic, winegar and oil and you can add different additives such as sweet pepper, almonds, avocado, cheese or orange. All ingredients are raw during preparation which means that are retaining all vitamins.  It is common practice on Canary Islands that wrinkled potatoes with skin (papas arrugadas) are served with green and red mojo.

Recipes for 4 people: 



PERSLEY MOJO-mojo de perejil

Parsley Mojo

Ingredients:

  •   240 ml olive oil
  •   white wine vinegar (if it is required)
  •   1 garlic bulb
  •   1 tsp salt
  •   1 bunch of parsley (remove the stalks)
  •   ½ tsp cumin

Directions:

Peeled garlic, salt, cumin and app 4 tsp of olive oil put together in a food processor or blender until all ingredients have been finally chopped. Add parsley and remaining oil. If it required, add vinegar.

Advice:

The parsley mojo goes best with domestic cheese and homemade bread. You can even  try to put it on pizza.

 


RED MOJO-mojo colorado

Red Mojo

Ingredients:

  •   240 ml olive oil
  •   white wine vinegar (if it is required)
  •   1 garlic bulb
  •   1 tsp salt
  •   ½ tsp cumin
  •   ½ tsp paprika
  •   1 pinch of saffron

Directions:

First, you have to mix together garlic, salt, cumin and little bit of olive oil and mash them very finely with blender or kernel. Then add paprika and saffron, slowly pour the remaining oil and season with vinegar if needed

Advice:

The red mojo goes with potatoes, rice or meat.

  


AVOCADO MOJO-mojo de aguacate

Avocado Mojo

Ingredients:

  •   240 ml olive oil
  •   white wine vinegar (if it is required)
  •   1 garlic bulb
  •   1 tsp salt
  •   1 bunch of parsley (remove the stalks)
  •   1 ripe avocado

Directions:

Peeled garlic, salt and app 4 tsp of olive oil put together in a food processor or blender until all ingredients have been finally chopped. Add the parsley and the flesh of avocado. Mix everything and season with vinegar if required.

Advice:

The avocado mojo taste good with potatoes and fish.

  


SPICY MOJO-mojo picon

Spicy Mojo

Ingredients:

  •   240 ml olive oil
  •   white wine vinegar (if it is required)
  •   1 garlic bulb
  •   1 tsp salt
  •   1 bunch of parsley (remove the stalks)
  •   2-4 chilli peppers
  •   1 tsp cumin
  •   1 tbsp hot paprika
  •   1 pinch of saffron

 Directions:

Grind garlic, salt, cumin and chopped chili peppers and put them together in a blender. It is important to crash them as finer is possible. Add the oil and rest of the spices.  season with vinegar if needed.

Advice:

The spicy mojo taste very good with potatoes, pizza, chips and mexican dishes such as tortilla, enchilada, fajita etc.

  


CREAM CHEESE MOJO-mojo de queso fresco

Cream Cheese Mojo

Ingredients:

  •   2 garlic cloves
  •   2 tbsp olive oil
  •   White wine (if it is required)
  •   160g fresh goat cheese
  •   130ml of water
  •   5 ml sour cream
  •   1 pinch of salt
  •   1 pinch of pepper

 Directions:

Chopped garlic mix with olive oil and then add white wine and water. Simmer a little. Melt the cheese in the hot liquid, season with salt and pepper. You can add fresh herb it if needed.

Advice:

The cream cheese mojo taste very good with all kind of pasta

  


ORANGE MOJO-mojo de naranjas

Orange Mojo

Ingredients:

  •   2 garlic cloves
  •   ½ onion
  •   2 tbsp olive oil
  •   1 cooked potato
  •   1tsp sugar
  •   1 tbsp salt
  •   1 tsp green peppercorns
  •   Juice of 2 oranges
  •  

Directions:

Sweat oil in a pan with some sugar and caramelize it, then add peeled and chopped (crushed) garlic and onion. Pour the orange juice and simmer a little while boiling on low fire. Wait until the mixture thickens, remove from the fire and then add chrushed potato. Mix everything in a blender and add salt and peppercorns.

Advice:

The orange mojo taste good with salad, rice, salmon and etc

 


RED PEPPER MOJO-mojo de pimiento

Red Pepper Mojo

Ingredients:

  •   1 garlic bulb
  •   1 red pepper
  •   240ml olive oil
  •   White wine vinegar (if it is required)
  •   ½ tsp cumin
  •   1 tsp salt

 Directions:

Mix peeled and chopped garlic, pepper, cumin, salt and little oil with the blender until everything is finely minced. Add remaining oil. If is required, add vinegar.

Advice:

The red pepper mojo taste good with rice, meat and fish

 


CORIANDER MOJO-mojo de cilantro

Coriander Mojo

Ingredients:

  •   1 garlic bulb
  •   240ml olive oil
  •   White wine vinegar
  •   1 tsp cumin
  •   1 bunch of coriander
  •   1 tsp coarse sea calt
  •  

Directions:

Mix peeled and chopped garlic, cumin, salt, coriander and little oil with the blender until everything is finely minced. Add remaining oil. If is required, add vinegar.

Advice:

 The coriander mojo goes best with domestic cheese, homemade bread and pasta

  


CHEESE MOJO PASTE-pate de mojo de queso

Cheese Mojo

Ingredients:

  •   300g hard cheese as desired
  •   4 garlic cloves
  •   1 chilli peppers
  •   2 ripe tomatos
  •   90 ml olive oil
  •   Pinch of salt

 

Directions:

Plunge tomatoes into boiling water for 40 seconds and when you cool them down, peel them. Chop tomato, chili, garlic very finely. Then scrub the cheese and add to the mixture. Add olive oil and stir for couple of minutes until it is absorbed by the mixture and until the mixture becomes creamy.  Add salt if needed.

Advice:

Cheese mojo paste taste very good as a spread.

 


ALMOND MOJO-mojo de almendras

Almond Mojo

Ingredients:

  •   6 garlic cloves
  •   240ml olive oil
  •   White wine vinegar (if needed)
  •   A Little hot paprika
  •   50g peeled almonds
  •   ½ tsp cumin
  •   1 slice toast without crust
  •   1 tsp salt

Directions:

After you peeled and finely chopped garlic, pour oil over the toast to soften it. Add garlic, salt paprika, almonds and cumin and mix in a blender until the mixture is finely minced. If is required, add vinegar.

Advice:

Almond mojo goes along with various meat dishes.

 


SAFFRON MOJO-mojo de azafran

Saffron Mojo

Ingredients:

  •   6 cloves of garlic
  •   1tsp coarse sea salt
  •   ½ tsp cumin
  •   2 tbsp Canarian or regular saffron
  •   200ml olive oil
  •   Some vinegar

Directions:

Grind the peeled garlic, add salt, cumin, saffron and some oil thoroughly in a mortar until everything is finely crushed. Slowly add the remaining oil. Season with vinegar if required.

Advice:

The saffron mojo is goes great with fried cheese.

  


GARLIC MOJO-mojo de ajos

Garlic Mojo

Ingredients:

  •   3 garlic bulbs
  •   1 tsp salt
  •   200ml olive oil
  •   Juice of 1 lemon

 

Directions:

Sprinkle peeled garlic cloves with some olive oil. Place in the oven and bake at 180°C about 40 min., until the garlic is soft and lightly browned. Puree with salt, oil and lemon juice.

Advice:

Garlic mojo tastes fine with all sorts of seafood and fish or pizza as well.

 


HERB MOJO-mojo de hierbas

Herb Mojo

Ingredients:

  •   3 garlic cloves
  •   1 green chili pepper
  •   4 peppermint leaves
  •   1 oregano branch
  •   1 thyme branch
  •   ½ bunch persley
  •   250ml olive oil
  •   1 tsp salt
  •   Juice of 1 lemon
  •   Some coriander

 Directions:

Grind peeled garlic, salt and chopped herbs with some oil thoroughly in a mortar until you obtain a smooth consistency. Add the remaining oil and season with lemon juice.

Advice:

Herb mojo tastes very well to all kind of dishes.

 

Few tips to improve the taste of mojo.

  • marinate chili and garlic for 7 days in sunflower oil
  • season the mojo with finely grated goats cheese
  • use the freshest domestic herbs
